Couscous Cakes with Smoked Salmon


Ingredients:
3/4 c instant couscous 1 c boiling water salt, pepper 2 Tbsp minced chives Veg. oil for cooking 2 Tbsp sour cream 1 tsp finely grated lemon rind 3 oz smoked salmon, sliced paper thin Fresh chives for garnish
Directions:
Combine couscous, water, pepper, salt in medium bowl. Let stand 10 min. Mixture should form a cohesive mass. If grains are separate, add a Tbsp of water. Stir in chives. Using 1/4 c couscous for ea. cake, shape into 4" rounds. Heat oil in skillet over medium high. Fry, turning once, until lightly browned at edges. To serve, stir sour cream and lemon rind together. Arrange slice of salmon over cakes, place about 1 tsp sour cream on top. Garnish with chives.
