Naing Kuk (Korean Cold Cucumber Soup)


Ingredients:
2 med cucumbers, 6" long 2 Tbsp lt soy sauce 1 1/2 Tbsp white vinegar 1 Tbsp chopped grn onions 1/2 tsp sugar 1/2 tsp chilipdr 1 1/2 tsp sesame oil 5 c chicken stock 2 tsp sesame seeds
Directions:
Slice peeled cucumbers v. thinly. Add soy sauce, vinegar, grn onions, sugar, chili pdr, sesame oil. Set aside 1 hr, add chicken stock. Toast sesame seeds, grind finely. Transfer to tureen, sprinkle on sesame seeds. Serve at rm temp, or slightly chilled.
