Basic Cookie Recipes

1 c. butter 1/2 c. vegetable shortening 1 1/2 c. sugar 2 eggs 4 tsp. vanilla 4 c. flour 1/2 tsp. baking powder 1/2 tsp. salt

A classic Christmas cookie, rich with butter. Preheat oven to 375°. Thoroughly beat butter and shortening. Add sugar gradually. Beat for 5 minutes, until fluffy. Add eggs and vanilla, beat well. In separate bowl, blend flour, baking powder, and salt. One third at a time, add second mixture to first, blending well each time. Dough should now be stiff. Put dough in cookie press and press cookies. Sprinkle with colored sugar or other topping if desired. Bake for 10 to 12 minutes at 375°, or until lightly browned.
