Sloppy Joe Casserole


Ingredients:
1 lb. ground beef 1 package Sloppy Joe mix 1 6oz. can tomato paste 1 1/2 c. water 1 can corn 2 c. shell macaroni 2 c. sharp cheddar cheese, grated.
Directions:
In a large electric skillet, brown ground beef until no longer pink. Drain fat. Add Sloppy Joe mix, water, and tomato paste. Stir, cook over medium heat for 10 minutes. Cook macaroni according to package directions. Drain. Stir cooked macaroni into Sloppy Joe mixture. Stir in 1 c. cheddar cheese. Drain corn, then add to mixture. Place in greased casserole dish. Bake at 350°F for 35 minutes. Remove from oven, top with the remaining cup of cheese, then return to oven for 10 minutes, or until cheese is nice and melty. Tip On draining fat from ground meat: Get a large dinner plate and lay a paper towel on it. Using a slotted spoon, remove the beef from the skillet and transfer to the plate. When the skillet is empty, drain the hot fat into an empty can. (By the way, do not use one of those little "Chinese food came in it" plastic containers - the hot fat will melt it and it gets real exciting there for a little bit.) When the skillet is empty, return the beef to the skillet.
