2 c. crushed corn chips
16 oz. refried beans
8 oz. shredded cheese, divided
1 c. salsa
2 c. shredded cooked turkey
1 tsp. taco seasoning
1 green onion, sliced
1 medium tomato, chopped
Why is this called a Telephone Turkey Taco Thing? Well, someone must've read this recipe to me over the phone: it's written on a tiny piece of paper...whichtook me 20 minutes to decipher what I wrote and it had no title - HAHAHA!
Preheat oven to 400°F.
Place crushed corn chips in a greased shallow 2.5 quart dish. Place beans in a small saucepan. Cook and stir over med. heat until warm. Remove, and stir in 1 cup cheese and salsa. Spread over chips.
Toss turkey and seasoning together and sprinkle over the bean mix. Top with remaining cheese. Sprinkle on the green onion.
Bake uncovered at 400°F for 20-25 min. or until cheese is melted. Sprinkle with tomato and serve. Serves 4-5. Enjoy! -Diana
