4 large potatoes
1 c. cooked ham
2 c. milk (or your milk substitute of choice)
3 Tbsp. rice flour
1/2 c. mayonnaise
salt and pepper to taste
Directions:
A delicious main dish or side dish.
Peel the potatoes and slice them thinly. Cut ham into bite-sized pieces.
In a 2 quart baking dish, lay one layer of potatoes and ham. Salt and pepper to taste. Repeat until all the potatoes are used.
In a medium bowl, combine rice flour and mayonnaise. Using a whisk, whisk in milk a little at a time. When sauce is smooth, pour over potatoes.
Bake at 350°F for 1 hour. (Check for doneness by poking the potatoes with a fork.)
