Creamy Macaroni Skillet

2-3 c. cooked (leftover) pasta
2 Tbsp. butter
2 Tbsp. flour
3/4 c. frozen green beans
2 c. milk
3 slices salami
2 slices American cheese
salt and pepper to taste
We did this for "Leftover Night" dinner one evening, and my son has asked for it for lunch every day since!
In a large skillet, melt butter. While the butter is melting, slice salami and American cheese (or other mild melty cheese) into little strips.
When butter is melted, add flour and stir to make a roux or paste. Add milk gradually, stirring to combine and keep the mixture smooth.
Once the milk is added, add in the cooked pasta, stirring to coat. Stir in salami, cheese, and frozen green beans.
As the milk cooks it releases its sugars, so the sauce will taste very mildly sweet and creamy. Season it with salt and pepper to taste. Cook until everything is heated through.
