2 small zucchini
olive oil
salt and pepper
breadcrumbs
Directions:
An easy side dish; throw it together while the oven's already hot and it's practically effortless.
Preheat oven to 350°F.
Cut the ends of the zucchini and slice them in half lengthwise.
Spray a baking dish with nonstick spray.
Place the zucchini in the baking dish, cut side up.
Brush tops with olive oil. Sprinkle with salt and pepper (or your favorite seasoned salt). Dust with breadcrumbs.
Bake at 350°F for 20 minutes or until interiors are softened. (Stick a toothpick in to test.)
