2 small yellow summer squash, thinly sliced
2 small zucchini, thinly sliced
1 medium tomato, seeded and chopped
1/4 cup pitted ripe black olives
2 Tbsp. chopped green onion (scallions)
2 tsp. good quality olive oil
1 tsp. lemon juice
3/4 tsp. garlic salt
1/4 tsp. dried oregano
1/8 tsp. cracked fresh black pepper
2 Tbsp. fresh grated Parmesan cheese (not the Green can cheese!)
Place the yellow squash, zucchini, tomato, olives and scallions on a double-thickness of heavy duty foil (17 x 18 inches dimension or so). Combine the oil, lemon juice, garlic salt, oregano and pepper; pour over the vegetables. Fold foil around the vegetables and seal foil packet tightly.
Grill, covered, over medium heat for 30-35 minutes or until the vegetables are tender.
Carefully open foil; transfer vegetables to a serving bowl. Sprinkle with Parmesan cheese. Serves 4. Opa!!
