Huevos Rancheros (Salsa and Eggs)

chorizo sausage, diced
My mom once ordered this at a restaurant in New Mexico. The salsa they used about knocked her socks off!
Spray a skillet with nonstick spray and heat over medium heat.
Fry sausage (we used pork roll, but chorizo is desired). Move sausage to the side of the skillet.
Fry eggs in the skillet. Remove to plate.
Top egg with sausage, salsa and grated cheese.
