Dry ingredients
1 c. sugar
1 1/2 c. flour
1/2 tsp. salt
1/4 c. cocoa
1 tsp baking soda
Wet ingredients
1 Tbsp. vinegar
1/3 c. salad oil
1 tsp. vanilla extract
1 c. cold water
Directions:
Sift dry ingredients into ungreased 8x8 baking pan, or into a 9" round cake pan.
Make a well in the dry ingredients, like my kids do for their gravy when we have mashed potatoes.
Into the well, pour vinegar, oil, vanilla, water. Stir until smooth.
Bake 30-35 min. at 350°F. Top with frosting, powdered sugar, or whipped cream.
Surprisingly rich taste for something that has no butter, no milk, and no eggs.
(I made this once as a "birthday treat" for my son's class when one of his classmates couldn't have dairy - gave them a list of the ingredients along with the cake...teacher didn't give the poor little guy any because she thought vanilla extract might have dairy in it. True.)
