2 c. cooked rice
1/2 - 3/4 c. cooked chicken
2 eggs
Directions:
A quick dinner for "leftover" night.
In a medium bowl, combine cooked rice with eggs. Stir until the rice is all separated and eggy.
Chop chicken into small bits.
Spray a large skillet with nonstick spray. Heat over medium high heat.
Add rice to skillet. Stirring frequently, allow to cook 2 min.
Add chicken. Stir frequently and cook until chicken is warmed through.
