Rich Coconut Cookie Bars

Ingredients:
1/2 lb. butter 4 Tbsp. confectioners' sugar (a.k.a. icing sugar, 10X) 2 c. + 4 Tbsp. flour 4 eggs 1 c. brown sugar 1 1/2 c. sugar 2 tsp. vanilla extract 1/2 tsp. salt 2 tsp. baking powder 1 c. nut meats, chopped coarsely (optional) 1 c. grated coconut 1/2 c. chocolate chips 2 c. white chocolate chips 1 can coconut milk 1 c. oatmeal (quick cooking)
Directions:
These rich gooey coconutty treats are a bake sale classic - and sure to be a hit with the coconut-lover in your life. Note: Nuts can be a problem nowadays. Leave them out if you need to. Preheat oven to 375°F. Butter and flour a 9x13 baking pan. Cream butter, add confectioners' sugar, and 2 c. flour. Blend. The mixture will look like coarse meal (and won't come into a smooth dough). Pat into pan, bake 15 min. While the base is baking, beat eggs, add brown sugar, sugar, and vanilla. Beat until thick. Sift together remaining 4 Tbsp. flour, salt, baking powder. Then add to egg mixture. Beat in nuts/chips/coconut (end up with 4 c of this mixture). Add coconut milk, 1 c. oatmeal. Pour evenly over pastry base, then bake 30 minutes. Cool in pan, (refrigerate if it seems really gooey), cut into squares and enjoy.
