Pulled Pork Sandwiches

Ingredients:
Nonstick cooking spray 3 - 3 1/2 lb. boneless shoulder pork roast (shoulder picnic is good) 10oz. jar apricot spreadable fruit (like Polaner All-Fruit) 1 c. bottled hot-style barbecue sauce (Open Pit brand is nice and cheap!) 1/2 c. chopped Vidalia or other sweet onion 1/2 c. snipped dried apricots (DO NOT OMIT!) Bulkie rolls or baps
Directions:
Bring home the taste of the Carolinas. Serve with a side of slaw and a glass of sweet tea. Note: You will need a crock pot or slow cooker. Yield: Serves 8 nicely. Lightly spray a 4 quart (or so) crock pot with nonstick spray. Trim the fat from the meat carefully. If you need to, cut the pork to fit the crock pot. Place meat in the crock. In a medium bowl, combine spreadable fruit, barbecue sauce, onion, and dried apricots. Pour over meat in the crock pot. Put the lid on the crock pot and cook on low: 8 - 10 hours on high: 4 - 5 hours When the time is up, transfer the pork to a wood cutting board with a trench in it. (It'll be super-juicy and the juice will run all over your counter and make a terrible mess.) Use two forks to gently shred the pork. In a large bowl, combine the pulled pork and some of the sauce from the cooker. Place the pulled pork onto sliced bulkie rolls. Pass the remaining sauce. Enjoy! -Diana
