3 c. potatoes, peeled and diced
1 Tbsp. yeast (1 packet)
3 c. white flour
1 c. wheat flour
2 tsp. salt
2 Tbsp. butter
A hearty country bread, just the thing for sopping up gravy...though when my son asked for mashed potatoes, I don't think this is what he meant!
Cook potatoes until fork tender, as for mashed potatoes. When potatoes are done, reserve 2/3 c. of the cooking water. Drain, and mash potatoes.
Mix together yeast, white flour, wheat flour, and salt. Add butter.
Combine potatoes with the reserved cooking water. Add this potato "slurry" to the flour mixture to form a soft dough.
Knead until smooth and elastic.
Place in a lightly grased bowl and leave to rise in a warm place 1 hour, or until doubled in bulk.
Punch down and shape into a plump oval loaf. Spray a baking sheet with nonstick and place the shaped loaf on the baking sheet. Let rise 30 min.
Using a sharp knife, slash the top with 3-4 diagonal cuts to make a criss-cross effect. Bake 30-35 min., until golden and hollow-sounding when tapped on the base.
