1 c. flour
3/4 c. corn meal
1/3 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. milk
1/4 c. vegetable oil
1 beaten egg
12 tsp. sugar for dusting
Directions:
Made these for breakfast and they disappeared. Yum.
Yield: 3 doz. mini muffins
Preheat oven to 375°F.
Sift together flour, corn meal, baking powder, and salt. Stir in milk, vegetable oil, and egg.
Spray 3 doz. mini muffin tins with nonstick spray. Ladle muffin batter into muffin tins.
Sprinkle each mini muffin with about 1/3 tsp. of granulated sugar. (Don't use too much, the sugar will boil up and be a tiny sugar volcano which looks a little weird. Just a little bit gives a nice sweet finish and a little bit of sparkle.)
Bake at 400°F for 15 min., or until golden brown and tops no longer look wet.
