Oreo Cookie Filling

3 1/2 c. powdered sugar 1/2 Tbsp. granulated sugar 1 tsp. vanilla 1/2 c. shortening 3 Tbsp. hot water

Ever want to make your own sandwich cookies? Here's how. I sandwiched my filling between megabig Oreo cookies I found at a local grocery store. In a medium mixing bowl, beat together 1 c. powdered sugar and shortening. When mixture is creamy, beat in granulated sugar and vanilla. Add another cup of powdered sugar. Add hot water. Beat until incorporated. It should look like spreadable frosting now. Add remaining powdered sugar. The frosting will be quite stiff at this point. Take a spoonful of frosting and roll it into a ball between your palms (My ball was about the size of a ping-pong ball, but my cookies were pretty big.) Set the ball in the very middle of the bottom of one cookie. Place the other bottom on top of the filling. Squeeze together gently and evenly so that an even thin layer of filling is between the cookies.
