1 2-3lb. London broil
1/4 c. olive oil
1 Tbsp. Montreal Steak Seasoning
(or 1 Tbsp. black pepper + 1 tsp. salt)
3 cloves garlic, minced
1 tsp. cayenne pepper
1 Tbsp. parsley
1 Tbsp. thyme
Directions:
A spicy take on "Steak Night" - and London Broil is a cut of meat that's often on sale, so it's great for "Budget" too!
In a large ziplock bag, combine olive oil, Montreal Steak Seasoning, garlic, cayenne, parsley, and thyme. Place meat in bag. Seal it and then squish the herbs and spices around to make sure the whole cut of meat is coated. Place in refrigerator 2 hours or overnight.
Either fire up the grill and grill until done to your liking, or place on a broiler pan and broil until done. Flip every once in a while during cooking; once it's close to done through, the meat will feel stiff rather than floppy.
(Our London Broil was about 2 in. thick and took about 30 min. to broil. The thickness of your meat and the heat of your broiler - and the distance from broiler pan to heat - will affect your cooking time.)
