2 c. flour
1 Tbsp. baking powder
1 tsp. salt
2 tsp. lemon zest
1/2 tsp. nutmeg
2 eggs
1/2 c. sugar
1/2 c. milk
1/2 c. oil
1 1/2 c. strawberries
Directions:
This quick and easy quick bread is like having strawberry shortcake in a slice! Forget the butter, pass the whipped cream...
Preheat oven to 350°F.
Into large bowl, sift together dry ingredients: flour, baking powder, salt, nutmeg.
Add 2 tsp. lemon zest: the yellow bit of lemon rind from a small lemon. Stir in eggs, one at a time. Beat in sugar, milk, and oil.
Spray a large loaf pan (9x5 in.) with nonstick spray.
Spoon batter into prepared pan. Bake at 350°F for 55 min. Loaf will be golden brown on top, and a cake tester (or sharp knife blade) will come out clean.
Remove from oven and allow to stand in pan 10 min. Turn out of pan and allow to cool completely. Really, let it cool completely. Slicing it hot requires the slices to be very thick and then it's gone too quickly!
