Sweet & Sour Ham over Rice More Recipes Like This

Ingredients: Metric Units
One 16-oz. can (2 cups) apricot halves in syrup
1.5 lbs. fully cooked ham, cut into strips (3 cups or so)
2 green peppers (I use red or orange), cut into 1 inch pieces
1 cup chicken broth
1/3 cup sugar
1/4 cup white vinegar
3 Tbsp. butter/margarine
3 Tbsp. soy sauce
4 Tbsp. cornstarch
2.5 cups packaged precooked rice
Cook the rice and set aside. Drain apricots, reserving the syrup. In a large saucepan, combine apricot syrup, ham, green peppers, 3/4 cup of the chicken broth, sugar, vinegar, butter and soy sauce. Bring to boiling; cover & simmer 10 minutes. Blend cornstarch and remaining broth (not hot) and add to ham mix. Cook and stir until boiling; boil for 2 minutes. Add apricots and remove from heat. Spoon over hot rice. Serves 6. Enjoy! -Diana
