Ukrainian Dessert recipes

Ingredients: Metric Units
5 eggs
1.5 cups sugar
a Scant 3 cups flour
1/2 pound (that's two sticks) sweet butter or margarine
1 tsp. vanilla or the grated rind of 1 lemon
2 heaping tsp. baking powder
fresh fruit, of course! (blueberries, cherries, Italian plums, peaches...)
Directions:
Preheat oven to 325 degrees. Cream butter and sugar together. Use a separator to separate an egg yolk from the white. Add the five egg yolks, one at a time, beating well after each addition. Sift flour with baking powder and add to the first mixture. Add vanilla (or lemon rind). In a separate clean stainless bowl, beat egg whites stiff and fold into the batter.

Grease a 9 x 13 inch baking pan. Pour in the batter and place any washed fresh fruit such as blueberries, cherries, Italian plums (the oval ones) or peaches on top of the batter. Bake at 325 degrees for about one hour. Enjoy! -Diana
