Luscious Peachy Grits Cheescake

2 eggs 2/3 c sugar 1/2 tsp vanilla 1 pkg cream cheese 2 c cooked quick grits, well cooked 2 graham cracker crusts 1 container sour cream (8 oz.) 1 can peach pie filling (20 oz.)

Combine eggs, sugar, vanilla, cream cheese and grits and beat with electric mixer on high speed for 10 min. Pour into pie crusts and bake 25 min. in 350° oven. Remove pies from oven, rais oven temp to 400 degrees for final step. Let pies cool 15 min. Mix together sour cream, pie filling. Spread over pies and return to oven for 10 min. Cool before serving.
