Omelet Pie (Crustless Quiche)

Ingredients:
4 oz. (1/2 cup shredded cheddar or Swiss cheese 6-7 slices cooked crumbled bacon or 2-3 slices ham, chopped 1/2 cup mushrooms, sliced and lightly sauteed (optional) 4 unbeaten eggs 1/2 c. all purpose flour 1/2 tsp. salt 1 1/2 c. skim or lowfat milk 1/2 c. chopped onion 2 Tbsp. margarine dash pepper Butter (for greasing pie plate)
Directions:
EDITOR'S NOTE: The men in my husband's family have declared: "Real men don't eat quiche!" Well, name it "Omelet Pie" and not only do they not know any better, they rave about how good it is - HAHAHAHAHA!!!! Yield: 6 servings Butter a 10 inch pie plate. Sprinkle cheese, bacon/ham and mushrooms in the prepared plate. In a blender, place remaining ingredients: eggs, flour, salt, milk, onion, pepper. Blend for one minute. Pour over ingredients in pie plate. Bake at 350F for 40 to 50 minutes (or a bit longer, if the pie plate is glass). Until center is set and doesn't jiggle when the pie plate is jostled.
