One Pie Crust dough for a single crust pie
3/4 c. firmly packed dark brown sugar
3 Tbsp. butter, softened
3/4 c. light corn syrup
1 tsp. vanilla extract
3 eggs
1 cup chopped cashews (unsalted)

Yield: 8 servings
Roll out pie crust dough for a 9 inch pie plate. Lay the crust in the pie plate.
Preheat oven to 350°F.
In a large bowl, beat the brown sugar and the butter at a high speed in a stand mixer until light and fluffy. Add the corn syrup and the vanilla extract; beat at medium speed until smooth.
Beat in the eggs, one at a time. Stir in cashews. Pour it all into the crust-lined pie plate.
Bake at 350°F for 45 to 50 min. or until top of pie is a deep golden brown color.
TIP: Cover the crust edges with a crust protector or strips of aluminum foil after the first 15 min. of baking to prevent a burned crust edge.
