Peach Pie


Ingredients:
two 9-inch pie crusts, unbaked 6 c. fresh, pared peach halves or canned peach halves 1 c. sugar 1 egg 2 Tbsp. flour 1/4 cup butter (that's half a stick!), melted
Directions:
If it's the season for millions of peaches, put some of them into a pie. Preheat oven to 400°F. Line a 9-inch pie plate with the bottom crust. In a small bowl, combine sugar, egg, flour and melted butter. Place peaches, cut side up, into the pie plate. Pour the egg/flour/butter/sugar mix over the peaches. Cover with the top crust. Flute/pinch together the edges and cut a few slits in the top crust with kitchen scissors or a sharp knife. Bake at 400°F for 15 min., then reduce heat to 325°F and bake for 50 min. longer. Serve hot with a scoop of vanilla ice cream. Or if serving cold, top with whipped cream. Enjoy! -Diana
