2 large lemons
2 c. sugar
4 eggs, well beaten
Double crust pastry for a 9-inch pie
Directions:
Wash lemons, and then slice the lemons as thin as paper, rind and all. Place lemons in a bowl. Combine with sugar; carefully mix well. Let stand for at least two hours, stirring occasionally. After two hours, stir beaten eggs into lemon mixture.
Preheat oven to 450°F.
Prepare a pie plate by laying the bottom crust into the pie plate. Pour mixture into bottom pie crust. Cover with top crust, crimp edges, and slice slits in top crust with a sharp knife or snip with kitchen scissors.
Bake at 450°F for 15 mins., then reduce heat to 375°F and bake for 20 more mins. Enjoy! -Diana
