Pork Alfredo

Ingredients:
2 cloves garlic 2 Tbsp. olive oil 3 Tbsp. flour 2 c. milk 2 c. cooked pork, cut in matchstick 2/3 c. Parmesan cheese 1 Tbsp. parsley 1 1/2 tsp. Italian seasoning 1/2 c. chicken broth (if needed)
Directions:
This may never show up on the menu at your local Italian bistro, but it was a way to use leftover pork with a bit of Italian flair. And the kids loved it! In a large skillet, heat olive oil. Mince garlic and sauté for 5 min. Stir in flour to make a smooth paste. Slowly stir in milk. Stir in pork. Simmer 5 min. Add grated Parmesan cheese. Season with parsley and Italian seasoning. Simmer until thickened. (If it gets too thick, thin it out with a little chicken broth.) Serve over pasta.
