Middle Eastern Salad Recipes
Ingredients: Metric Units
2 bunches parsley
2 medium tomatoes
1 cucumber
1/4 c. fresh mint
1 c. fine bulgur wheat
1/2 c. water
1/2 c. lemon juice
1/4 c. olive oil
salt
pepper
bunch scallions
Directions:
A cool refreshing salad from the cuisine of the Middle East. Perfect for a summer picnic.

Chop parsley finely. Cut tomatoes into small dice. Dice cucumber in similar size. Chop mint leaves finely. Combine in large bowl.

In medium bowl, steep bulgur wheat on water for 5 min. Add to cucumber-tomato-herb mixture. Stir in lemon juice and olive oil. Stir to combine. Season to taste with salt and pepper. Let stand 15 min. to allow flavors to blend, or refrigerate until the picnic.
