1/2 c rice flour
2 Tbsp ground rice
1 tsp ground coriander
1/2 tsp ground cumin
1/4 tsp ground turmeric
1/8 tsp kencur powder (aromatic ginger)
3/4 tsp salt
1 c coconut milk
1 clove crushed garlic
1 small onion finely chopped
3/4 c fresh/dried coconut
oil for frying
Directions:
Sift dry ingredients. Add coconut milk, beat to smooth batter. Mix in garlic, onions, coconut. Mix well. Heat 1/2 inch of oil in fry pan to almost smoking point. Drop batter by tablespoons into the oil. It should spread self into a lacy wafer. (If too thick, thin with milk.) Fry utnil golden brown on underside, turn, fry other side until golden. Drain, cool on absorbent paper, covered wire rack. Store in airtight container.
