Baked Rice Pudding More Recipes Like This


Ingredients: Metric Units
3 beaten eggs
1 1/2 c. whole milk
1/2 c. sugar
1 tsp. pure vanilla extract
1 c. medium or long-grain rice, cooked
1/2 c. brown raisins
1/4 tsp. ground cinnamon
Directions:
A yummy way to use leftover rice.

Note: Starts with cooked rice.

Note: Remember, ingredients matter. Spring for pure vanilla extract and give the imitation stuff a pass.

Preheat oven to 325F.

Before you start, choose a 1 1/2 to 2 quart casserole and set it in a roasting pan. Pour in enough water so that the casserole is sitting in about an inch of water. Pour the water into a pan and set it on to boil.

While the water is heating up, in a mixing bowl, combine eggs, milk, sugar and vanilla. Beat until well-mixed. Add rice and raisins. Pour into the ungreased 1.5 to 2 quart casserole and sprinkle the cinnamon on top. Place the casserole inside the roasting pan and add the boiling water to the outside pan.

Bake for about an hour, stirring well after 30 min. Bake until a knife inserted in the middle comes out clean. Serve warm, room temperature or cold.
