3 c. whole milk
1/3 c. uncooked medium or long-grain rice
1/3 c. brown raisins
1/4 c. sugar
1 tsp. real vanilla extract (no imitation!)
A quick version of rice pudding that comes together on the stovetop.
Note: Starts with uncooked rice.
Using a heavy saucepan, bring milk JUST to boiling over medium heat. Add the rice and the raisins. Cover and cook over low heat for 30 min., stirring occasionally. It may look curdled; that's okay. Remove from the heat. Stir in the sugar (less, to taste) and vanilla. Serve, sprinkled with cinnamon. Opa! -Diana
