Irish Soda Bread More Recipes Like This

Ingredients: Metric Units
4 c. all-purpose flour
4 Tbsp. white sugar
1 Tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. margarine, softened
1 1/4 c. buttermilk, divided
1 large egg
1/4 c. butter, melted



Directions:
Bake up a little taste of the Green Countrie for St. Patrick's Day. This buttery, crumbly bread needs no adornment. Perfect with a nice cup of hot sweet tea. Erin go bragh!

Preheat oven to 375F. Lightly grease a cookie sheet.

In a large bowl, mix together flour, sugar, baking powder, baking soda, salt and margarine. Stir in 1 cup of buttermilk and the egg. Turn dough out onto a lightly floured surface and knead it lightly. Form dough into a round loaf and place on prepared cookie sheet.

In a small bowl, combine melted butter with 1/4 cup buttermilk. Brush loaf with buttermilk mixture. Use a sharp knife to cut an 'X' into the top of the loaf.

Bake at 375F for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean. You may continue to brush the loaf with the remaining butter mixture while it bakes. Cool on wire rack. Enjoy! -Diana
