7 oz. coconut
1 14oz. can sweetened condensed milk
1/4 lb. butter (8 Tbsp.)
cinnamon for dusting |
Directions:
This is a great recipe to do with kids - we actually made them as an activity for our Cub Scout Den. And my friend Jeanne used to make them with her preschool class. And technically, they may not be Irish, but they do show up about St. Patrick's Day, so wear your green and Erin go bragh!
In a microwave safe bowl, heat condensed milk and butter in the microwave. Heat in 1 min. increments until butter is melted, stirring after each increment.
Stir in coconut and powdered sugar.
Roll into small round balls. Roll in cinnamon.
Let stand before eating (or eat right away).
