Crockpot Lemon-Baked Chicken More Recipes Like This

Ingredients: Metric Units
1 large lemon
3-4 lb. whole chicken
1 small onion
2 Tbsp. olive oil
2 cloves garlic
3 Tbsp. brandy
2 Tbsp. chopped parsley
A perfect dish for those days when you don't have any time to cook. Make this fall-of-the-bone tender chicken with a citrus zing. Serve with rice and a vegetable and dinner's done.

Yield: Serves 6-8

Preheat slow cooker on high.

Grate zest of lemon. Cut in half. Into a small bowl, squeeze one half of the lemon. Cut the remainder of the lemon into four pieces. Cut the onion into quarters. Place the onion and lemon quarters in the cavity of the chicken.

In a large skillet, heat olive oil. Brown chicken all over. Then transfer the chicken to the crock of the slow-cooker or crockpot.

Slice garlic cloves thinly. Add to the skillet with lemon zest. Sauté briefly. Stir in lemon juice and brandy. Add chopped parsley and bring to a boil. Remove from heat.

Spoon the sauce over the chicken in the crock.
