1 lb. medium potatoes
8 Tbsp. vegetable oil
1 small onion
2 cloves garlic
2 Tbsp. soy sauce
1 tsp. wine vinegar
1 Tbsp. sea salt
pinch chili powder
French fries with an Asian flair. Serve them hot and crispy. We made these for our Chinese New Year themed Blue and Gold Cub Scout Banquet.
Peel potatoes and cut into long thin slices. Cut the slices into matchsticks.
Bring a pot of wter to a boil and blanch the potatoes 2 min. Drain. Rinse under cold water, drain. Pat dry.
Heat oil in a wok or large skillet. Cut onion into quarters and garlic cloves into halves. Place onion and garlic in the oil. Stir fry 1 min. Remove and discard. (Or save to use in another recipe.) Add potato sticks to the oil, stir fry 3-4 min., until golden.
Add soy sauce, salt, vinegar. Reduce heat and cook until potatoes are crisp.
Drain on paper towels. Season with salt and chili powder.
