2 Tbsp. olive oil
2 tsp. rosemary
2 tsp. thyme
juice of 1 lemon (3 Tbsp.)
zest of 1 lemon |
Directions:
Light and moist, a great dinner if you're watching your waistline.
Preheat oven to 400°F.
In a 9x13 rectangular baking pan, place chicken breast.
Season chicken with salt, pepper, olive oil, rosemary, thyme, lemon and lemon zest. Toss the chicken pieces to coat the pieces with the seasonings.
Roast in 400°F for about 30 min., until chicken is no longer pink.
