Strawberry Butter Torte


Ingredients:
Layer 1: For 8x8 1 c. cookie crumbs 1/4 c. melted butter Layer 2: 1/2 c. butter 2 1/2 c. powdered sugar 2 eggs (Use egg substitute - scant 1/2 c. egg beaters egg substitute) Layer 3: 1/2 pint whipping cream 1/4 c. sugar 1 1/2 c. sliced berries 3/4 c. nuts For 9X13: double all, exc. nuts: 1 c.
Directions:
Combine butter & crumbs. Line pan bottom. Cream butter, powdered sugar, eggs. (It's a good idea to use an egg substitute for these eggs; don't court food-related illness!) Pour over crust. Whip cream, fold in sugar, nuts, berries. Spread on top. Chill several hours. Cut into squares. Can be made day before and chilled overnight. A very rich dessert.
