Tangy Lemon Squares


Ingredients:
1 c butter, softened 1/2 c powdered sugar (a.k.a. 10X or icing sugar) 2 1/3 c flour 4 eggs 2 c granulated sugar 1/3 c lemon juice 1 tsp. baking powder 2 Tbsp. powdered sugar for dusting
Directions:
Cream butter, 1/2 c. powdered sugar until fluffy. Add 2 c flour, beat until blended. Spread evenly over well greased 9"x13" rectangular baking pan. Bake at 350ºF for 20 minutes. Meanwhile, in a large bowl, beat eggs until light and foamy. Add granulated sugar. Beat until the mixture is thick and well blended. Add lemon juice, remaining flour, and baking powder. Beat until blended. Pour lemon-egg mixture over baked crust. Bake at 350ºF for 25 - 30 minutes., until golden. Sprinkle with powdered sugar before serving. A bake sale favorite.
