3 c coconut milk
2/3 c sticky rice
1/4 c sugar
1/2 tsp salt
2 large mangos, peeled, in wedges
Rince rice with cold water until water runs clear. Soak in water to cover 2 hrs. Drain. Scald milk in top of double boiler. Add rice, sugar, salt. Cover, cook over simmering water until rice is tender, 15–20 min. Remove from heat and spoon into serving bowl to cool. Divide mangos and serve with rice. Spoon coconut cream over top. Makes 4 servings.
