1 1/2 c. short-grain glutinous white rice
1 Tbsp. salt
3 1/2 c. thin coconut milk
2 eggs, lightly beaten
young banana leaves or Aluminum foil
3/4 c. soft brown sugar
3/4 c. water
1 1/2 c. thick coconut milk
Rinse rice in several changes of cold water, drain well.
Place in saucepan with salt, thin coconut milk. Boil, simmer until thick paste. Cool to lukewarm, add eggs.
Dip banana leaves in boiling water to clean, soften. Cut away thick central rib. Place piece of leaf in bottom of baking pan, brush lightly with vegetable oil. Spread rice paste thickly over leaf, cover with another oiled leaf. Steam until firm. Cool, chill. Combine sugar, water, simmer until sugar dissolves. Cool. Remove banana leaf, cut into pieces. Place in dessert dishes, add sugar, coconut milk to each.
