3 lbs. pork roast or pork butt
Cooking spray
1 tsp. salt
1/2 tsp coarsely ground pepper
1/2 tsp paprika
2 medium onions, coarsely chopped (about 1 cup)
1/2 cup uncooked regular long grain rice
1 cup your favorite barbecue sauce
1 cup water
1 tsp garlic powder
Directions:
Featured at the 2009 Uwchlan Hills Teacher Appreciation Luncheon ("UH-loha! Luau") This was our alternative to actually having a roast pig.
Cut pork into 2 inch pieces. Sprinkle pork with salt, pepper, paprika, and garlic powder. Brown pork on grill or stovetop over medium heat for 3 minutes on each side; set aside.
Spray inside of slow cooker with cooking spray. Add onions, rice, barbecue sauce and water to slow cooker. Transfer browned pork to slow cooker.
Cover and cook in slow cooker on low heat setting about 8 hours, or until pork is tender and falls apart when stirred with a fork. Season with salt and pepper to taste at end if desired. Stir occasionally during the cooking time to ensure even cooking. Serve on crusty rolls with coleslaw on the side.
