Heat oven to 350°. Have ready 6 1cup baking dishes (ramekins, custard cups, souffle dishes) Divide cream, tarragon, shallot in bottom of ea. dish. Carefully crack an egg into ea cup, season with salt, pepper, sprinkle with cheese. (Can be prepared ahead, cover and refrigerate) About 15 min before serving, arrange baking dishes on baking sheet. Bake in heated oven until yolks lightly set, 12-14 min.
