3 cups raw baby spinach leaves
1.5 cups strawberries
1 Tbsp. water
1 Tbsp. poppyseed dressing
Directions:
Sweet with strawberries, green with spinach, an upscale salad for the blended diet.
Yield: 1 c. puree
Thoroughly wash baby spinach leaves, even if the package says "pre-washed." Bring spinach and water to a boil in a medium saucepan. Turn heat to low and simmer for 10 minutes.
If using frozen strawberries, quickly rinse them under cold water to thaw a little, and then drain.
Fill the bowl of a food processor with the strawberries and cooked spinach and water, and puree on high until as smooth as possible. Stop occasionally to push top contents to bottom using a rubber spatula.
Add the poppyseed dressing and blend again.
This recipe can be doubled; it will store in the refrigerator up to 2 days, or freeze in sealed plastic bags or small plastic containers.
