1 pork tenderloin
three cloves garlic
1 Tbsp. FRESH rosemary leaves (do not use dried!!!!)
fresh cracked black pepper
1 jar of pork gravy
Salt to taste
A delicious dinner, and will it blend? Yes! A delicious blended diet dinner.
Preheat oven to 375 degrees. Rinse tenderloin and pat dry with paper towels. Slice each garlic clove in half. Using a steak knife, make six 1-inch incisions in the tenderloin and push a clove into each hole. Drizzle olive oil over tenderloin and crack some black pepper over all.
Cook for approximately 25 mins. or until meat thermometer inserted into the middle reads 165 degrees or until meat is no longer pink. Do not overcook. Remove from oven and let cool for about 5 mins.
Slice up the tenderloin and add half of it to a blender. Sprinkle half the rosemary over the slices, then add half the jar of gravy. Blend until desired consistency, adding water if necessary. Remove from blender and repeat with other half. Taste and add salt as necessary. Makes 6 servings.
Freeze leftovers in plastic freezer bags for up to a month, or, if only one family member is on blended, then serve up some sliced tenderloin to other family members and adjust the gravy/water for the remainder of the tenderloin.
