Scallops Veronique More Recipes Like This

Ingredients: Metric Units
1/4 cup butter or margarine
1/2 cup chopped shallots
1/4 cup cornstarch
3 cups fish stock or chicken broth
1/2 cup dry white wine
2 Tbsp. lemon juice
2 lbs. scallops
2 cups seedless green grapes
Hot cooked white and wild rice
Ground mace

-In a 3-quart casserole, combine butter and shallots. Microwave at full power (HIGH) for 3 mins. or until shallots are tender. Stir in cornstarch and mace. Microwave at full power for 30 seconds. Whisk in stock or broth and wine. Microwave at full power for 8 to 10 minutes or until thickened and bubbly, stirring 3 times. Mixture should be thick and smooth. Stir in lemon juice. Gently fold in scallops. Cover. Microwave on full power for 4 to 5 minutes. Stir in grapes. Let stand, covered, 5 mins. Serve over hot cooked white/wild rice. Sprinkle with paprika. Enjoy!!! -Diana
