Buttercream Frosting


Ingredients:
1/3 cup soft butter or margarine 1/8 tsp. salt About 3 cups sifted confectioner's sugar About 1/8 to 1/4 cup milk or light cream 1 1/2 tsp. vanilla extract
Directions:
A good basic frosting for cake, cupcakes, cookies, graham crackers... Yield: enough frosting for a two-layer 8-inch or 9-inch cake, or a 9x9x2 cake With an electric mixer on medium speed (or with a spoon), thoroughly mix butter with salt and 1 cup confectioner's sugar until light and fluffy. Add remaining sugar and milk alternately, beating until very smooth and of spreading consistency; add vanilla. Variations: Lemon Frosting: Substitute lemon juice for milk. Omit vanilla. Mocha: Increase sugar to a whole 1-pound box. Sift with 1/2 cup cocoa. Substitute 1/3 cup hot coffee for milk. Decrease vanilla to 1/2 tsp. Orange: Use 1/2 cup soft butter, 1/8 tsp. salt, 3.5 cups sifted confectioner's sugar, 2 unbeaten egg yolks, 1 tsp. orange rind, and about 2 Tbsp. of the 1/8 to 1/4 cup milk. Make as before, adding egg yolks and rind before adding the rest of the sugar and milk. Enjoy!!! -Diana
