1 heaping Tbsp. shortening
1/2 cup sugar
1 tsp. baking soda
1/4 cup molasses
1 egg
pinch salt
1/2 tsp. cinnamon
1/4 tsp. ginger
1 rounded cup flour
1/2 cup boiling water
Directions:
A gingery-sweet cake. Serve it warm with whipped cream.
Yield: 16 2x2 squares
Preheat oven to 350°. Prepare an 8x8 inch baking pan by spraying with nonstick or greasing with shortening.
Cream shortening and sugar. Dissolve baking soda in molasses, and add to shortening mixture. Beat egg, and add salt, cinnamon, and ginger. Add to shortening mixture.
Stir in flour, then boiling water. Batter will be thin - that's okay, it makes the cake light and moist. Pour the batter into a greased 8 by 8-inch pan.
Bake in a 350 degree oven for 30 minutes or until cake tests done (springs back when you gently poke it, a toothpick comes out clean).
