1 lb. ground beef
1/2 c. celery, chopped
1/2 c. onion, chopped
2 Tbsp. flour
1 tsp. salt
1/2 tsp. oregano
2 c. tomato sauce
1 package refrigerated biscuits
1 c. shredded cheese
A casserole dinner that's a little like inside-out Sloppy Joes.
Yield: Serves 6
In a large skillet, brown the ground beef until no longer pink. Defat the skillet: Place a paper towel on a large dinner plate. Using a slotted spoon, remove the beef from the skillet to the plate. Pour off the fat into a discarded can. (Don't use plastic; it melts - a note from the Accidental Cook.) Return the meat to the skillet.
Add chopped celery and onion. Saute until onion is softened and translucent.
Add the flour, salt, pepper, and oregano. Stir to combine well. Add tomato sauce. Simmer while you prepare the pan and preheat the oven.
Spray a 9x13 baking pan with nonstick spray. Preheat oven to 350°F.
Pour the sauce into the prepared pan. Press a knife handle at the seam of the tube of refrigerated biscuits to open the container. Separate biscuits and lay on top of the sauce. If you can make sure the biscuits don't touch each other, the bottoms will be less gooey.
Bake at 350° 20 min. or until biscuit topping is golden brown. Sprinkle with cheese and serve.
