Everyday Waffles (Vardagsvåfflor)

Ingredients:
4 Tbsp. butter 2 eggs 2 1/2 c. milk 2 c. flour dash salt
Directions:
These tender Swedish waffles are delicious any time. Absolutely a fantastic rich waffle. Yield: about 7 waffles Melt butter and set aside to let cool. In a medium bowl, beat eggs well. Add half the milk and all the flour. Pour in the remaining milk, salt, and melted butter. Preheat the waffle iron and grease it with a little butter, or nonstick spray. (If you have a waffle iron with a nonstick coating, don't worry about coating the iron's surface.) Use about 2/3 c. of batter for each waffle. Cook waffle until golden. How do you know when it's golden? My waffle iron has this cool thing where a little light turns green when the waffle's done. If yours doesn't green-light your waffle, keep an eye on the steam rolling out of the iron. When it slows down, your waffle's done. Be careful getting the waffle out of the iron - these are very tender. Serve immediately or set aside in a warm oven. Serve waffles with jam, topped with whipped cream or ice cream. So rich, you won't need to spread any butter on top.
