1 Tbsp. vegetable oil
4 finely chopped cloves of garlic
1 lb. lean pork, ground
2 finely chopped jalapeno peppers (chop wearing gloves!)
2 Tbsp. sugar
1 Tbsp. fish sauce (comes in a bottle)
1/4 - 1/3 cup unsalted dry roast peanuts, chopped coarsely
2 Tbsp. fresh cilantro, snipped, plus more for sprinkle garnish
1 small pineapple, pared, cored, cut into slices
Hot, cooked rice or rice noodles
Directions:
Heat oil in a wok or large skillet until hot. Stir fry the garlic until light brown (watch so it doesn't burn!). Add the pork and stir fry until browned (about 6-8 mins). Add the peanuts and the 2 Tbsp. cilantro; stir fry for a minute. Spoon pork onto the pineapple slices. Sprinkle with the extra cilantro. Serve over hot cooked rice or noodles. Serves 4. Enjoy! -Diana
